Thanks once again, Rolly, for another wonderful recipe. All over Mexico there are home cooks who are the culinary memory of Mexico, and Adriana's recipes are part of that history. I am planning to make tacos al pastor in the very near future, now that I know how to do it. Please thank Adriana for me.

N.

Rolly, that looks good. What is the cut of meat called in Spanish so I don't have to guess what is the right cut by looking at it.

Nery says it is called pulpa de ceredo. But it might be different in your area.

Happy cooking!

I found a site that translate English food names into Spanish. I accidentally bought Vietnamese catfish and thought I was buying Sea Bass. The catfish is supposed to be good though.
