OK - I have some Colima (key) limes I have to use up, some canned coco milk/cream (opened and has to be used), fresh 'mojito' mint (growing everywhere) - whats a sunset cocktail that might use all these ingredients?

I keep trying this recipe - but it doesn't seem to work out some how :?

Mix it into a Schweppes quinine fizzy. Call it the "CocoCrushl".

Another good one with the same mixer, tequila and lime: The Tequila Moonrise. :shock:

Harry Nillson was great.... I remember an album back in 74 or 75
Nillson Son Of Schmillson or sumthin like that... lauged like hell...

Found some nice frozen pineapple too - from the Honduras.

Maybe I'll just make a Classic Fit Shazer. You know the recipe that starts with;

1)Take a large bottle of rum, open and sip very carefully, to ensure freshness.

... and ends

6) ANd thts It! Add the last ounce of bottle to the mixture and serve to your guests! :mrgreen:

Save the mint for another night, throw the coconut cream, pineapple and some lime juice in the blender with a lot of dark rum and maybe some orange juice or better yet a mango.

I thought I would add that there was an unexpected outcome, in a way. I always found pina coladas too "heavy" and sweet. - I liked the idea of tonic water and mint to make the drink tall and fizzy. I also added blue agave syrup. I thought the whole thing would separate out into a mess, but after adding the tonic water, the result was like a fluffy 'whipped cream'. There was some liquid at the bottom, but it was still colored like the rest. This could really catch on with bartenders because it makes the drink look twice as big as it really is, sort of like those slushy drinks.

Get rid of the coconut milk unless you have a tapeworm! Coconut milk + Addaprin treatments will kill a tapeworm! Has no business in a cocktail!

Fresh coconut milk, right out of the nut, is also good to cure a hangover.
